I used to be the pickiest eater, but my husband Trés encouraged me to try new foods. Now, a lot of the things I didn't like are my favorites! We love coastal vacations, so I had to learn to love seafood, too. My spin on ceviche puts a southern flare in this Mexican-style dish.
When I think of my childhood, I think of growing up in the country. We lived on 10 acres of land in a small town in Mississippi, and I just remember spring being so bright and colorful and green. It was beautiful! This recipe takes me right back to being a kid.
